Disable Project Stage and Project Value

Databricks would like to disable the default Project fields of Project Stage and Project Value. The reason for stage is they built a custom field to replace this field (I am working with them to switch it to Project Stage). Project Value does not capture the correct value since it is defaulted to $.

Project Stage - Do you know why they created new field instead of using system default one?
Project Value - Do you know what currency support they need? Do you know if there is a need for multi-currency support? For example, Project 1 in $ and Project 2 in some other currency?

1- No, I do not know why the chose to do a new field. I suggested otherwise.

2-Yes, multi-currency support: $, CAD, Euro, etc.
