I'm wondering if there is a way to automatically close/archive projects at the end of the day - or other defined period of time.

At this time there isn't a way to automate closing or archiving a project. If you'd like, feel free to enter this as a product enhancement using the "Submit an idea" button in the bottom left-hand corner of your instance.
